Instructions

Preheat the oven to 325°F (160°C).

Rip the kale leaves into large pieces roughly 2 to 3 inches long (think chip shapes), discarding the stems. Toss the pieces into a large bowl.

Whisk together the oil, lime juice, chili powder, salt, lime zest, garlic powder, and pepper in a small mixing bowl until combined. Pour the mixture over the kale pieces and massage well with your hands to coat the pieces in oil and break down the fibers.

Spread the kale onto two large baking sheets, leaving a bit of space between the pieces.

Bake for 7 to 9 minutes, or until the chips feel crisp to the touch and begin to turn golden on the edges. These can burn easily, so keep a close eye on them! Allow to cool for a few minutes before digging in. These get soggy with time, so it’s best to eat them within a couple of hours.
